Many things about this fish are unusual. I saw it on the menu during a visit to San Diego several years ago and tried it. No lie — among the most delicious, rich-flavored fish I have ever tasted. Indeed, red like tuna. More on the firm than flakey side. Quite filling. Has to have something to do with that unique metabolism. Fascinating when seen in an aquarium, but do not pass up a chance to taste one.
