Boar Kinda Bores

Okay so the roast was from D’Artagnan known for their duck and stuff: looked promising. Here’s the item itself.
The lamb steak from the same source was plenty fine if not exceptional. But the boar was tough. Nice flavor, not as rich as some local sources, but fine. Still, that chewy-chewy koo-koo-booee keeps people away from boar and they are not going to develop a market unless they figure out how to beat that.
