I hope this doesn’t make us seem too ignorant, but one of the best tips we learned at the food demonstration last Sat. is that fresh pasta can be frozen with ease — has no effect on flavor, texture, or (even) cooking time. For up to five months. In a couple weeks, the chef was going to cook some Valentine’s Day specials he made last year, but he didn’t want to claim 12 months because some freezers might not be able to pull that off.
